Zucchini Boats

After our weekend camping we came back to the biggest zucchini ever-about 2.5 feet long! We usually pick them on the smaller side to make sure the flavor is there. But this one snuck past us on Friday and grew fat and fast until I picked it on Sunday.  My mom came up with the suggestion for stuffed zucchini since I certainly didn't want any to go to waste.

Such a pretty sight! The boats are now filled to the gills with 
chopped zucchini (from another much smaller one), onion, 
turkey bacon, egg, bread crumbs, basil, rosemary and s&p.

Next up, I put a couple tomatoes and some garlic cloves in the food 
processor and covered up the lil boats with the mixture. 
Oh yah, I snuck some grated cheese in there first.

Ahoy! I wish you could smell this.
The lil boats baking away in the oven made the kitchen 
smell freaking amazing. A repeat dish for sure.

Those look dee-lish! I haven't had zucchini boats in forever. Totally makes me want to bust some out before summer is over!
