Hot Summer Nights: Zucchini Cakes

During the summer months whenever I see a recipe for zucchini anything, I bookmark it, dog ear it or tear it out. We have planted it again this year in our garden and it always does so well. I have made zucchini bread, stuffed boats, plain on the grill and shredded. This time I tried out little zucchini cakes. How many times will I have said zucchini before this post is over?

Once I sliced into that bell pepper it puffed out some air and 
it was completely rotten on the inside!!! Disgust. 
So I used a red onion in its place.

Excuse my sweaty in the kitchen appearance, 
but check out my sweet new apron! 
It was a gift from my bridal shower.
Here I am holding the shredded zucchini. 
It is so much easier and fun to shred than cheese. (RIP)
